Banana Split Muffins
- 2 c. packaged biscuit mix
- 1/4 c. sugar
- 2 egg yolks, beaten
- 2/3 c. milk
- 2 Tbsp. shortening, melted
- 1/2 small banana
- 12 maraschino cherries, halved
- 12 walnut halves
- 2 egg whites
- 1/3 c. sugar
- 2/3 c. flaked coconut
- Combine
- biscuit
- mix
- and
- 1/4 cup sugar.
- Combine egg yolks, milk
- and shortening.
- Add the milk mixture all at once to the dry
- mixture,
- stirring
- just to moisten.
- Place 1 1/2 tablespoons of
- batter
- in each of 12 cups of a greased muffin tin.
- Cut
- the banana
- into 12 cubes.
- Place a banana cube, a cherry half
- and
- a walnut
- half atop the batter in each cup. Cover
- with
- a tablespoon more batter.
- Beat egg whites until soft
- peaks
- form. Gradually
- add
- the 1/3 cup sugar, beating until stiff
- peaks form.
- Fold
- in
- the coconut.
- Place 1 1/2 tablespoons of this meringue on each muffin.
- Top with remaining cherries.
- Bake at 400u0b0 for 15 to 20 minutes.
- Makes 12.
