Banana Split Muffins

  1. Combine
  2. biscuit
  3. mix
  4. and
  5. 1/4 cup sugar.
  6. Combine egg yolks, milk
  7. and shortening.
  8. Add the milk mixture all at once to the dry
  9. mixture,
  10. stirring
  11. just to moisten.
  12. Place 1 1/2 tablespoons of
  13. batter
  14. in each of 12 cups of a greased muffin tin.
  15. Cut
  16. the banana
  17. into 12 cubes.
  18. Place a banana cube, a cherry half
  19. and
  20. a walnut
  21. half atop the batter in each cup. Cover
  22. with
  23. a tablespoon more batter.
  24. Beat egg whites until soft
  25. peaks
  26. form. Gradually
  27. add
  28. the 1/3 cup sugar, beating until stiff
  29. peaks form.
  30. Fold
  31. in
  32. the coconut.
  33. Place 1 1/2 tablespoons of this meringue on each muffin.
  34. Top with remaining cherries.
  35. Bake at 400u0b0 for 15 to 20 minutes.
  36. Makes 12.
