Apple Peanut Butter Cookies With Flax & Chia
- 2 medium apples, cored & diced
- 1 flax egg
- 2 tablespoons tbsp coconut oil
- 1/2 cup brown rice syrup
- 1/4 teaspoon almond extract
- 1 cup GF rolled oats
- 3/4 cup brown rice flour
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 dash sea salt
- 2 tablespoons Powdered Peanut Butter
- 1 1/2 tablespoons warm water
- 1 packet sweetener
- Preheat oven to 350 degrees F
- Using a hand or standing mixer, add flax egg, coconut oil, almond extract, brown rice syrup & mix then add diced apples & coat with mixture
- Then add spices, oats & flour & combine until everything is mixed well
- To a baking sheet lined with parchment paper, add 1 are spoonful of batter to form a cookie
- The batter will be loose & you may need to form them a bit with your hands, they will harden when they bake
- Bake 15 minutes until edges are slightly browned
- Remove from the oven & place on a cooling rack to cool
- In a small ramekin mix the drizzle together, you may need a little more water or PB to get the desired consistency
- Using a 1/4 tsp pour drizzle on top of cookies and enjoy warm
