Low-Fat Low-Cholesterol Chocolate Cake

  1. Preheat oven to 350u0b0.
  2. Grease and flour one (13 x 9-inch) baking pan or one Bundt form.
  3. In a large mixing bowl, beat margarine and 1 cup sugar until light and fluffy.
  4. Add 1/3 cup cold water, cocoa and vanilla, mixing well.
  5. Add flour alternately with 1 cup water, beating after each addition.
  6. In a mixing bowl, beat egg whites lightly; gradually add 3/4 cup sugar.
  7. Beat until stiff peaks form.
  8. Fold beaten egg whites into batter.
  9. Dissolve soda in remaining 1/3 cup water; stir into batter.
  10. Pour batter into prepared pans.
  11. Bake 30 to 35 minutes.
  12. Cool on racks before removing from pans.
