Sweet Almond Chicken
- 6 chicken breast halves
- 2 tsp. butter, melted
- 1/2 c. red currant jelly
- 1 1/2 Tbsp. brown sugar
- 1 Tbsp. lemon juice
- 2 Tbsp. prepared mustard
- 1/4 tsp. cinnamon
- 1/8 tsp. red pepper
- 1/3 c. slivered almonds
- Place chicken in a lightly greased 13 x 9 x 2-inch baking dish.
- Drizzle with melted butter.
- Combine jelly and next 5 ingredients in a saucepan.
- Cook over medium heat until jelly dissolves, stirring occasionally.
- Remove from heat.
- Let cool slightly.
- Stir in almonds.
- Pour half of jelly mixture over chicken.
- Cover and bake at 350u0b0 for 20 minutes.
- Uncover and bake 5 additional minutes or until done.
- Baste with remains of jelly. Broil chicken 4 inches from heat.
- Makes 6 servings.
