Creamy Vegan Corn Soup

  1. saute chopped onion in olive oil until translucent
  2. add steamed corn, coconut milk, chicken stock and red pepper flakes
  3. bring to a gentle simmer, remove from heat, and adjust seasonings
  4. cool, puree, and chillrnor......rnserve warm
  5. assemble the salsa garnish: chop tomato, cucumber & cilantro, add fresh lime juicernand a light touch of honey or sugar, chill.
  6. divide the soup into four chilled glasses or cups if serving cold, either way, ,top with a garnish of bright salsa
