Gingery Orange Kielbasa Bites
- 1/2 cup of thinly sliced peeled ginger root
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 cups orange juice
- 1/4 teaspoon vanilla extract
- 2 pounds kielbasa or smoked sausage thinly sliced into rounds
- In a sauce pan combine the ginger, two sugars and orange juice. Bring to a boil and then simmer for about 15 minutes. Once simmered, remove from the heat and stir in the vanilla extract. Let the mixture sit for 30 minutes or so to marry the flavors.
- Strain the syrup. Place the sliced sausage in a medium sauce pan and pour the liquid over. Bring everything up to a boil and then down to a simmer and let simmer until the sausage is glazed and the syrup is almost gone. Watch carefully...you don't want to burn the sausage. Give everything a stir every few minutes until you get a nice glaze on the sausage. Transfer to a serving dish and pass the toothpicks!
