Mrs. Howe'S Sour Cream Chocolate Cake
- 2 c. cake flour
- 1 tsp. soda
- 1/4 tsp. salt
- 2 sq. bitter chocolate
- 1/2 c. shortening
- 2 eggs
- 3/4 c. sour cream
- 1 tsp. vanilla
- 1/2 c. boiling water or strong hot coffee
- 1 1/2 c. sugar
- Sift flour; measure and resift 3 times with soda and salt. Melt chocolate over hot water and cool.
- Cream shortening, adding sugar gradually; add whole eggs and beat until fluffy and light colored.
- Stir in melted chocolate.
- Add flour mixture in small portions alternately with sour cream, stirring well after each addition.
- Add vanilla, then stir in boiling water or coffee. Turn into 2 (8-inch) greased cake pans which have been buttered and lined with buttered wax paper.
- Bake in a 350u0b0 oven for 25 to 30 minutes.
- Cool and spread with icing.
