Anytime Spinach Salad With Triscuit Wheatberry Clusters
- Dressing
- 2 tablespoons favorite fruit jam
- 1 tablespoon Dijon mustard
- 2 tablespoons raw cider vinegar
- 4 tablespoons olive oil
- 1/2 teaspoon freshly grated ginger
- salt and pepper to taste
- Salad
- 6 cups fresh baby spinach
- 1 large green apple, seeded and cut into small chunks
- 1/4 cup sliced almonds
- 1/2 cup celery leaves
- 1 ounce blue cheese
- 1/2 cup Cranberries & Cashews Triscuit Wheatberry Clusters
- In a small mason jar, combine dressing ingredients, tightly close the lid, and shake vigorously.
- Combine and toss the ingredients for the salad in a large mixing bowl.
- Lightly drizzle the dressing over the mixed salad.
