Chicken Fruit Salad
- 4 c. cooked chicken, cut in bite size pieces
- 3/4 c. diced celery
- 1 c. seedless white grapes, halved
- 1 c. mandarin oranges
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 2 Tbsp. chopped parsley
- 2 Tbsp. finely chopped onion
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. herb salad dressing mix (Hidden Valley Ranch)
- 1/4 c. toasted slivered almonds
- lettuce
- Mix chicken, celery, grapes and orange sections.
- Chill while you pare the dressing.
- Mix together other ingredients; pour over chicken and fruit.
- Mix well.
- Cover; let chill for several hours (the longer the better).
- Serve on lettuce, sprinkling top with almonds.
- Serves 8.
