Praline Apple Bread
- 1 cup sugar
- 2 eggs
- 8 oz. sour cream
- 2 tsp vanilla
- 1 c chopped pecans
- 2 c flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 tsp. baking powder
- 1 1/2 c tart apples, peeled and chopped
- 1/4 c butter or margarine
- 1/4 c brown sugar
- In a large mixing bowl, beat together sugar, sour cream, eggs and vanilla on low speed with an electric mixer until combined. Then beat on medium speed for two minutes.
- Stir together flour, baking powder, soda and salt, add to sour cream mixture, beat on low speed until combined.
- Stir in apple and 1/2 cup of the pecans. Turn into a greased 9x5x3 inch loaf pan.
- Sprinkle with remaining pecans and press lightly into batter.
- Bake at 350 for 55-60 minutes (test with toothpick).
- Cool in pan on rack for 10 minutes. In a small pan combine butter and brown sugar.
- Cook and stir until mixture comes to a boil.
- Reduce heat and boil gently for one minute.
- Remove bread from pan and drizzle with brown sugar mixture.
- Cool.
