Lucy'S Cake
- 3 envelopes dream whip
- 1 half pound can crushed pineapple (drained)
- 3 envelopes Knox gelatin
- 1 1/2 cups sweet milk
- 1/2 tsp. vanilla
- 1 tsp. lemon juice
- 1 cup sugar
- 1 cup pecans (cut up)
- 1 small bottle cherries (cut up)
- 1 can angel flake coconut
- 1 angel food cake
- 4 Tbsp. cold water
- 1 cup boiling water
- Bake angel food cake according to package directions, cool. Dissolve gelatin in 4 Tbsp. cold water, add hot water and stir until dissolved - add pineapple, sugar, lemon juice - put in refrigerator to set or thicken.
- Whip 2 envelopes dream whip with 1 cup sweet milk and 1/2 tsp. vanilla - add this to the gelatin mixture - break up angel food cake in large pan - add the gelatin mixture, nuts and cherries, mix thoroughly.
- Grease tub pan - spoon mixture into pan and press down.
- Chill overnight - ice with 1 package dream whip and 1/2 cup milk.
- Spread with coconut and cherries.
