Summer Entree Peach Salad

  1. Mix all of the salad ingredients together and serve immediately.
  2. For Peach Vinaigrette: rnPut all ingredients except for the canola oil in a blender
  3. Blend on high for 5 seconds to chop the shallots and basil
  4. Turn the blender to medium low speed and slowly incorporate the canola oil
  5. Once all oil is emulsified, season with salt.
