Spicy Italian Frittata

  1. Saute items over low-medium heat in 8-10" non-stick all metal frying pan (important, no plastic or rubber!)rnDrain tomato juice into a bowl and keep
  2. Preheat oven to 500F
  3. Mix eggs and cheese in mixing bowl. (Note, can vary cheeses). rnMix in drained tomato from saute
  4. Pour over sauteed vegetable mixture over medium heat 2 min
  5. Put into 500F oven for 10-12 min till top cooked (not runny).rnTake out of oven. CAUTION, HOT, USE HIGH TEMP GLOVE/ MITrnWith spatula ensure that fritatta is not stuck.rnPut serving dish on top of pan and turn over. REMEMBER, HOT HANDLE!
