King Ranch Chicken
- Any amount of chicken breast (preferably on the bone)
- 1/2 - 1 lb. shredded cheese
- 1 green pepper, chopped
- 1 onion, chopped
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- chili powder
- garlic powder (if prefer)
- 1 pkg. floured tortillas
- 1 can diced Ro-tel
- This casserole is done in layers, one on top of the other. Boil the chicken breasts covered in water on the stove with a slice of onion, salt and pepper until it falls off the bone.
- Pull chicken off the bone and cut into chunks.
- Remember to save your cooking water from the chicken and use as broth for the casserole. Dice up the onion and the green pepper and mix together.
- Mix the two soups together.
