Banana Spice Bread
- 2/3 c. margarine or butter, softened
- 1 c. sugar
- 1 c. mashed bananas (about 2 large)
- 1/3 c. milk
- 2 eggs
- 2 1/4 c. all-purpose flour
- 1/2 c. Kretschmer original wheat germ
- 2 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 3/4 tsp. salt (optional)
- Heat oven to 350u0b0.
- Grease and flour a 9 x 5-inch loaf pan. Beat together the margarine and sugar until light and fluffy. Blend in bananas, milk and eggs.
- Gradually add combined dry ingredients, mixing well after each addition.
- Spoon into prepared pan.
- Bake for 70 to 75 minutes, or until wooden pick inserted in center comes out clean.
- Cool 10 minutes; remove from pan.
- Cool completely on wire rack.
- Serve with cinnamon butter or other flavored butters or fruit preserves.
- Makes one loaf (18 slices).
