Shrimp Creole
- 1 1/2 c. chopped onion
- 1 c. chopped celery
- 2 green onions, chopped
- 2 cloves minced garlic
- 1/4 c. butter
- 1 (15 oz.) can tomato sauce
- 1 c. water
- 2 tsp. snipped parsley
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 2 bay leaves
- 14 oz. peeled fresh shrimp
- 3 c. hot cooked rice
- Melt butter in skillet.
- Add onions, celery, green pepper and garlic.
- Cook until onions are tender.
- Remove from heat.
- Add tomato sauce, water and seasoning and stir.
- Return to heat and simmer uncovered for 10 minutes.
- May add additional water if needed.
- Stir in shrimp and heat to boiling.
- Cover and reduce heat to medium and cook 10 to 20 minutes or until shrimp are pink and tender.
- Serve over hot cooked rice.
