Maple Ginger Raisin Cookies
- 2 cups white flour
- 1 tablespoon ground ginger
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon maple extract
- 1/2 cup butter {room temperature}
- 1 cup granulated sugar
- 1 large egg
- 1/3 cup unsulfured molasses
- 1 cup raisins
- Beat butter, sugar, vanilla, ginger, maple extract, and nutmeg until fluffy. Add egg and molasses and mix well. Add flour, salt, baking soda, and raisins. Mix well. Cover and let sit in fridge for 30 minutes.
- Preheat oven to 350 degrees. Roll balls of dough in sugar and place 2 inches apart on cookie sheet lined with parchment.rnBake for 16 minutes just until centers are set. Let cool.rnStore in airtight container for up to a week.
