Banana Nut Chip Cake
- 1/2 cup Butter
- 1 1/2 cups Surgar
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup Soured milk
- 1 cup mashed bananas, 2 large
- 1 teaspoon vanilla
- 1 cup chopped walnuts
- 1 packet small bag of mini chocolate chips
- 2 cups flour
- Preheat oven to 350degrees. rnTo sour milk: Add 1/2tsp Vinegar or lemon juice to 1/4 milk. Stir and let the particles separate. rnMash bananas: Mash bananas with a fork. and splash with brandy, about a TBL.
- Combine flour, baking powder and baking soda. Cream butter and sugar; then add eggs. Alternately add flour mixture and sour milk to the creamed mixture. Add bananas, vanilla, nuts and then chocolate bits. .
- Pour into prepared pans. (Baker's Joy) I use small loaf pans. 7 1/2 X3 3/4X 2 1/4 inches. Bake for approximately 1 hr. Original recipe called for two loaf pans. (9X5") .
