Pasta Salad With Tuna And Snow Peas
- 1/2 lb. fresh snow peas
- 1 can tuna (water pack)
- 10 oz. fusilli, cooked and drained
- 1/4 tsp. dill
- pepper
- 4 to 5 scallions, trimmed
- 2 Tbsp. nonfat mayonnaise
- 2 Tbsp. nonfat yogurt
- 1/4 tsp. dried mustard
- Blanch snow peas 45 seconds in boiled, salted water.
- Drain and refresh under cold running water.
- Cut diagonal into 1/2-inch pieces and set aside.
- Chop scallions finely.
- Put tuna in large bowl and flake with fork.
- Add snow peas, scallions, pasta and toss.
- Mix mayonnaise, yogurt, mustard and dill.
- Add pasta mixture and toss well.
- The mayonnaise mixture will be barely visible.
- Add black pepper to taste.
- Refrigerate approximately 1 hour before serving.
