Tomato, Chili & Tuna Spaghetti

  1. Bring a large pan of water to the boil with a dash of oil and sprinkle of salt. Once boiling, place the spaghetti in the pan and cook away. Cooking times may vary, but usually dried spaghetti will take 8-9 mins to cook. So that is how long you have to cook everything else.
  2. In a frying pan, over a high heat, heat the olive oil and garlic. Cook the garlic until it just begins to turn a light brown. Chuck in the halved tomatoes and the chili flakes. Toss the pan. Leave on a high heat to cook away for 3 mins or so.
  3. Now add the halved olives, tuna, lemon juice, and a nice grind of sea salt in to the mix. Toss again.
  4. Check the spaghetti.If you think it is almost done, take a strand of spaghetti, being careful not to burn yourself and throw it with quite some force at your nearest wall. If it sticks, it is done.
  5. Once cooked, drain the spaghetti, add the spaghetti to the frying pan and toss together with the tomato and tuna mix. Get the pasta well smothered and then dish up, finishing with a light grating of parmesan.
  6. Get yourself a well-deserved white wine spritzer, a good book, and enjoy your lunch.
