Mexican Casserole
- 4 (6-inch) flour tortillas
- 1 lb. ground beef
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1 pkg. taco seasoning mix
- 1 (8 oz.) tomato sauce
- 1 (6 oz.) tomato paste
- 1/4 c. water
- 1/2 tsp. chili powder
- 1 c. sour cream
- 4 slices Cojack cheese
- 2 eggs
- 1/4 tsp. pepper
- 2 c. broken corn chips
- Brown ground beef.
- Add green peppers and onion.
- Mix in taco seasoning, sauce and paste, water and chili powder over medium heat.
- Blend sour cream, eggs and pepper in small bowl.
- Place 1/2 of tortillas on bottom of 9 x 13-inch dish.
- Top with 1/2 the meat mix.
- Place 2 slices of cheese on top.
- Repeat.
- Sprinkle with corn chips.
- Bake at 350u0b0 for 45 minutes.
