Spinach Madeleine
- 2 (10 oz.) pkg. frozen, chopped spinach
- 2 Tbsp. flour
- 1/2 c. reserved liquid
- 3/4 tsp. celery salt
- 1 tsp. Worcestershire sauce
- crackers, crushed or bread crumbs
- 4 Tbsp. butter
- 2 Tbsp. onion, chopped
- 1/2 tsp. pepper
- 3/4 tsp. garlic salt
- 6 oz. roll jalapeno cheese
- Cook spinach according to package directions.
- Drain and reserve liquid.
- Melt butter and add flour; cook until smooth, then add onion.
- Cook until tender, but not brown.
- Add 1/2 cup reserved liquid.
- Stir constantly until smooth and thick.
- Stir in cheese until it melts.
- Mix with spinach.
- Pour into a 9 x 9-inch uncovered, ungreased dish.
- Cover with crushed crackers or bread crumbs. Bake at 350u0b0 for 15 minutes
