Korean Yak Bap - Sweet Steamed Rice Cake

- 2 cups white glutinous rice
- 20 dates
- 1 cup chesnuts
- 1/2 cup brown sugar
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 tablespoons pine nuts
- 1 tablespoon soy sauce
- 1 tablespoon cinnamon
- 1/8 teaspoon salt
- 2 tablespoons sweet rice wine
- Rinse rice like you would with regular rice and soak in water for about 3-4 hrs
- Pit and julienne dates. For the chestnuts, you can use already roasted ones that you buy in packets in Asian supermarkets. If you are using raw chestnuts, carefully peel them and cut into quarters
- Drain the rice and add all the seasoning and other ingredients. Mix well and place in rice cooker and turn on according to the machine. You can also place in a steamer for an hour instead.
- Once rice cooker is done, pack yakbap into a lightly greased 8x8 baking pan and allow to cool. Cut into 8 squares and serve.
