Caramelized Banana Bread
- For the Caramelized Bananas
- 1 cup Sliced Bananas (About 3 Bananas)
- 2 tablespoons Butter or Margarine
- 2 teaspoons Brown Sugar
- For the Bread
- 1/2 cup Butter or Margarine
- 2 Eggs
- 1 teaspoon Vanilla
- 1/2 cup Sour Cream
- 1 cup Sugar
- 1 1/2 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 teaspoon Cinnamon
- Peel and slice the bananas into medallions about 1/2 an inch thick, or as desired, and set aside.
- In a pan over medium heat melt the butter. Once the butter has melted add the brown sugar and stir constantly until the sugar has melted and combined with the butter.
- Add the bananas to the pan and stir to coat. Continue cooking until the bananas have softened and browned, about 5 minutes.
- Remove the bananas from heat, remove them from the pan to cool and set aside.rnReserve the remaining sauce from the pan separately.
- Preheat oven to 350 F and grease a large loaf pan.
- Begin by creaming together eggs, butter, sugar and vanilla.
- In a separate bowl, combine and whisk together the flour, salt, baking soda and cinnamon. Once combined, add the dry ingredients to the eggs, butter, sugar and vanilla mixture.
- Mash the caramelized bananas and add them with the sour cream to the batter and mix well.
- Add the batter to the loaf pan and drizzle the reserved caramel over the top.
- Bake for 1 hour.
