Filipino Style Adobo Collard Greens With Salt Pork

  1. In a large stock pot, heat salt pork over medium heat.
  2. Cook pork until golden brown (about 15-20 minutes), drain pork on a paper towel.
  3. Reserve 3 tbsp of the leftover oil, discard the rest
  4. In the same pot, stir in collards, garlic. bay leaf and water.
  5. Simmer for 20-30 minutes until tender.
  6. Remove pot from the burner.
  7. Remove the bay leaf and add in the vinegar, soy sauce and coconut milk.
  8. Stir to combine.
  9. Add the crispy pork.
  10. Serve warm!
