Breaded Tilapia & Cilantro Lime Corn
- Breaded Fish
- 3-4 tilapia filets
- 1/3 cup flour
- 1 egg
- 2 teaspoons half and half or milk
- 1/2-3/4 cups Italian bread crumbs (Panko)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Corn Topping
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 can corn, strained
- 1 lime juiced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 bunch fresh cilantro, finely chopped
- For the fish, use 3 plates or pie dishes and put flour on one, beaten egg and half and half on another, and then bread crumbs on one.
- Coat the fish on both sides very well with flour first, then egg, then bread crumbs.
- Heat a deep skillet over medium heat, and add olive oil and 2 tbsp butter.
- Add the fish, and sprinkle with salt and pepper.
- Cook until golden and flaky, about 3-4 minutes one each side.rnTransfer to a plate.
- In the same skillet, add 2 tbsp butter and crush the garlic into it, mix.
- Add the corn, lime juice, salt, and pepper; mix well and cook for a couple of minutes.
- Stir in the fresh cilantro.
- Serve the corn mixture over the cooked fish.
