Funnel Cakes
- 3 eggs
- 2 c. milk
- 4 c. flour
- 1/3 c. sugar
- 1/2 tsp. salt
- 1 Tbsp. baking powder
- lard or other shortening (for frying)
- powdered sugar
- Beat eggs and milk.
- Sift dry ingredients together; add egg-milk mixture, beating as you pour.
- Continue beating until smooth.
- Let batter stand a few minutes while you heat 3 to 4 inches of fat to 375u0b0.
- Pour batter into small pitcher for easier handling.
- Take an ordinary household funnel and put your finger over the end of it.
- Pour some batter into mouth of funnel; take off your finger and let batter drop into hot fat, swirling it around and around until it is 3 inches in diameter.
- Fry until light golden brown.
- Drain on paper towels.
- Sprinkle with powdered sugar.
- Serve hot. Makes about 12 cakes.
