Baked Fish A La Mil
- 2 to 4 lb. fish fillets (whitefish, turbot, grouper or mullet)
- 4 fresh tomatoes, peeled, seeded and diced
- 1/4 c. olive oil
- 1/2 c. white wine
- 1 Tbsp. fresh basil, chopped
- 2 Tbsp. parsley, chopped
- 1 to 2 garlic cloves, chopped fine
- 1 small onion, sliced fine
- 1/2 green pepper, sliced fine
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. soy sauce
- 1 c. fresh baked crumbs
- 1 slice Feta cheese (for each portion of fish)
- salt and pepper to taste
- Put fish fillets in baking pan.
- Saute onion, pepper, garlic and tomatoes with olive oil.
- Add basil, parsley, vinegar, soy sauce, wine and bread crumbs to onion and pepper mixture.
- Season to taste.
- Spoon mixture on each fish fillet.
- Bake at 375u0b0 until fish is opaque and flakes easily.
- Top fillets with Feta cheese. Broil for 1 to 2 minutes.
