Lemon Glazed Persimmon Bars
- 1 egg
- 1 c. sugar
- 1/2 c. oil
- 1 1/2 tsp. lemon juice
- 1 tsp. baking soda
- 1 c. persimmon pulp
- 1 3/4 c. flour
- 1/2 tsp. salt
- 1/4 tsp. ground cloves
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. walnuts
- 1 c. raisins
- 1 c. powdered sugar
- 2 Tbsp. lemon juice
- Combine eggs, sugar and oil; mix well.
- Stir 1 1/2 teaspoons lemon juice and baking soda into pulp.
- Combine flour, salt and spices.
- Add to egg mixture alternately with persimmon mixture, mixing well after each addition.
- Stir in walnuts and raisins. Spread in greased and floured oblong pan.
- Bake at 350u0b0 for 25 minutes or until lightly browned.
- Cool for 5 minutes.
