Spicy Sausage, Kale, And White Bean Soup

  1. Soften onion in olive oil over medium heat in a large pot, about 5 minutes.
  2. Add garlic and stir for 30 seconds.
  3. Add sausage and brown, breaking into pieces as it cooks.
  4. Once browned, pour in Worcestershire sauce and use to scrape browned bits off bottom of pan.
  5. Add the beans and kale, season with salt, pepper, nutmeg, Italian herbs, and red pepper flakes, and stir together.
  6. Add apple cider vinegar, and cook until kale is wilted and liquid is cooked off.
  7. Add chicken stock and bring to a boil.
  8. Add Parmesan rind, cover, and then simmer for 20 minutes.
  9. Top with additional Parmesan and serve.
