Joe'S Special (My Version)

  1. Saute pork in an iron skillet and add the onion. Saute until browned.
  2. Add the spinach and using tongs keep folding into the hot ingredients until completely wilted.
  3. Beat the egg with a little water and pinch of salt.
  4. Add to the spinach mixture and gently mix and smooth out the egg and spinach to incorporate all ingredients evenly.
  5. Sprinkle the parmesan over the top. Turn off the burner and leave for a few minutes to slightly melt.
  6. Grind black pepper and a little sea salt.rnEnjoy the whole pan or share. A big hunk of freshly baked sour dough bread is great.
