Joe'S Special (My Version)
- 3 ounces ground pork
- 2 ounces chopped onions
- 6 ounces ,a big handful of spinach, chopped a little if necessary to fit into the pan
- 1 large fresh duck egg beat with 1 teaspoon of water
- 1/8 cup parmesan
- pinch of salt and black pepper
- Saute pork in an iron skillet and add the onion. Saute until browned.
- Add the spinach and using tongs keep folding into the hot ingredients until completely wilted.
- Beat the egg with a little water and pinch of salt.
- Add to the spinach mixture and gently mix and smooth out the egg and spinach to incorporate all ingredients evenly.
- Sprinkle the parmesan over the top. Turn off the burner and leave for a few minutes to slightly melt.
- Grind black pepper and a little sea salt.rnEnjoy the whole pan or share. A big hunk of freshly baked sour dough bread is great.
