Brazil Nut Coffee Cake Bars
- 2 c. flour
- 1 tsp. baking powder
- 1 1/3 c. sugar
- 4 tsp. cinnamon
- 1/2 c. soft butter or margarine
- 1/2 c. Crisco, softened
- 1 egg
- 1 egg, separated
- 1 c. chopped Brazil nuts
- Preheat oven to 350u0b0.
- Sift flour, baking powder, 1 cup sugar and 3
- teaspoons
- cinnamontnto large bowl.
- Add butter and Crisco, while egg and
- eggtolk.
- With
- electric mixer on low speed mix well.
- Turn into 15
- 1/2 x 10 1/2 x 1-inch jelly roll pan.
- Spread evenly with spatula or pat with hands.
- With fork beat
- egg white
- slightly;trush
- over
- dough.
- Combine remaining 1/3 cup sugar,
- 1
- teaspoon
- cinnamon
- andtuts and sprinkle over top of dough.
- Bake 25 minutes or until nuts are golden brown. Cool in pan; cut into 2 x 1 inch bars.
- Makes 6 dozen depending on size of cuts.
- Do not overcook.
