Impossible Mexican Pie
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (1 1/4 oz.) envelope taco seasoning mix
- 1 (4 oz.) can whole green chilies, drained, seeded and chopped
- 1 c. taco or Cheddar cheese, grated
- 3 eggs
- 1 1/2 c. milk
- 3/4 c. Bisquick baking mix
- 1/2 tsp. red pepper sauce
- Heat oven to 400u0b0.
- Grease a 10-inch pie plate pan.
- Cook and stir ground beef and onion in skillet until done.
- Drain; stir in seasoning mix.
- Spread beef mixture in pie plate.
- Sprinkle with cheese and chilies.
- Beat remaining ingredients until smooth, 15 seconds in blender on high speed.
- Pour into pie plate over mixture.
- Bake until golden brown and knife inserted in center comes out clean, about 25 to 30 minutes.
- Let stand 5 minutes before serving.
- Refrigerate any leftovers.
