Hawaiian Pineapple Chicken(Serves 8)
- 1 large broiling or frying chicken, cut into at least 8 parts
- salt and pepper to taste
- 1/4 tsp. ground ginger
- 1/2 c. flour
- 2 Tbsp. butter or margarine
- 1 medium onion, chopped fine
- 2 chicken bouillon cubes, dissolved in 1 c. boiling water
- 1/2 c. green peppers, cut in 1/4 inch pieces
- 1 c. drained pineapple chunks, cut in halves (save the juice)
- 1 Tbsp. cornstarch
- 2 Tbsp. of the saved pineapple juice
- 2 tsp. soy sauce
- 2 Tbsp. brown sugar
- Wash the chicken pieces in cold running water and dry them thoroughly with paper towels.
- Mix the salt, pepper and ginger together in a small bowl.
- Sprinkle this mixture onto the chicken parts and rub it in with your fingers.
- Lightly sprinkle on the flour or gently shake the chicken parts in a bag containing the flour.
- Set the coated chicken pieces on a plate.
