Sweet And Sour Chicken

  1. Drain pineapple, reserving juice.
  2. Add water to juice to make 2 1/4 cups.
  3. Saute onion in shortening in large skillet until tender.
  4. Add 1 1/4 cups water, carrots and bouillon.
  5. Cover and simmer 5 minutes.
  6. Combine sugar, cornstarch and ginger.
  7. Add catsup, vinegar and soy sauce and stir into vegetable mixture. Cook until clear and thickened.
  8. Add chicken, green peppers and pineapple.
  9. Cover and simmer 5 minutes.
