Salad Bar Minestrone
- 1 1/4 lb. mixed salad bar vegetables (7 c.)
- 1/2 lb. sweet Italian sausage
- 1 clove garlic, chopped
- 2 Tbsp. olive oil
- 1 (8 oz.) can tomato sauce
- 1 (10 3/4 oz.) can condensed beef broth
- 3 soup cans water
- 1 (19 oz.) can undrained white kidney (cannellini) beans
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. orzo or other small pasta
- Slice any large vegetable into bite size pieces.
- Saute sausage and garlic in oil in a large pot until meat is no longer pink.
- Drain most of oil.
- Add vegetables.
- Saute 2 to 5 minutes until vegetables begin to brown.
- Stir in tomato sauce, broth, water, beans and seasonings.
- Simmer, uncovered, 15 minutes. Sprinkle pasta over soup; simmer 15 minutes or until pasta is tender.
