Lemon Chicken Parmesan
- 4 single chicken breasts (boneless)
- 1 egg, beaten
- 1 Tbsp. milk
- 1 clove garlic, minced
- sprinkling of salt and pepper
- 1 1/2 c. bread crumbs
- 1/3 c. chicken broth
- 2 Tbsp. white wine
- 1/2 c. Parmesan cheese
- 2 Tbsp. fresh lemon juice
- 3 Tbsp. olive oil
- Preheat oven to 350u0b0.
- Combine egg, milk, garlic, salt and pepper.
- Dip chicken breasts in this mixture and then in bread crumbs.
- Heat olive oil in skillet; saute chicken very quickly, just until browned.
- Put in flat Pyrex casserole.
- Pour the chicken broth over it.
- Sprinkle with white wine, then with Parmesan cheese and lastly the lemon juice.
- Bake, covered, at 350u0b0 for 25 minutes, then uncover and cook 10 minutes more.
