Whole Wheat Zucchini Bread
- 2 eggs
- 1/2 c. vegetable oil
- 3 Tbsp. molasses
- 1/2 c. packed light brown sugar
- 1 tsp. vanilla extract
- 3/4 c. whole wheat pastry flour
- 1/2 c. unbleached flour
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 c. shredded zucchini, drained if watery
- 1/2 c. raisins
- 1/2 c. chopped nuts
- Preheat oven to 350u0b0.
- Beat eggs in a large bowl.
- Add oil, molasses, light brown sugar and vanilla.
- Beat until smooth and thick.
- In a separate bowl, combine the flours, baking soda, baking powder, salt and cinnamon; add to the egg mixture and stir until well blended.
- Fold in zucchini, raisins and nuts.
