Cheesy Vegetable Chowder

  1. Combine first 6 ingredients; bring to boil.
  2. Cover.
  3. Reduce heat and simmer 15 to 20 minutes or until potatoes are tender. Stir in corn; remove from heat.
  4. Melt butter in heavy saucepan over low heat.
  5. Add flour and stir until smooth.
  6. Cook 1 minute, stirring constantly until thick and bubbly.
  7. Add cheese and cook until cheese melts, stirring constantly.
  8. Gradually stir cheese mixture into vegetable mixture.
  9. Serves 6 to 8.
