Mom'S Favorite Blueberry-Bran Muffins
- 1 1/2 cups wheat bran
- 1 1/4 cups white grape juice
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/3 cup safflower oil
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 very ripe banana, mashed
- 1 1/4 cups blueberries
- Preheat the oven to 350u0b0 and line a muffin tin with 12 liners. In a large bowl, mix the wheat bran and grape juice into a paste. Let sit for 15 minutes.
- Meanwhile, in a medium bowl, whisk together the flour, baking soda, baking powder and salt.
- To the wheat bran paste, stir in the oil, honey, vanilla and banana until smooth. Fold in the dry ingredients until smooth, followed by the blueberries. Divide the batter between the muffin liners (about 6 tablespoons per muffin).
- Bake until golden brown and a toothpick comes out clean when inserted in the center, 30 to 35 minutes. Let cool completely, then serve.
