Chicken With Muenster Cheese

  1. Slightly flatten chicken breasts.
  2. Dredge in seasoned flour, shaking off excess.
  3. In medium skillet, heat 1/4 cup butter with oil.
  4. Saute chicken until lightly brown and cooked through (about 4 minutes on each side).
  5. Transfer chicken to an oven dish; add wine and bring to a boil, stirring in the brown bits.
  6. Simmer 3 minutes.
  7. Add salt and pepper.
  8. Heat butter; saute mushrooms for 5 minutes.
  9. Preheat broiler.
  10. Top chicken with slices of cheese. Pour mushrooms over chicken.
  11. Place under broiler for 3 minutes or until cheese is melted.
