Easy Pumpkin Swirl
- 3 eggs
- 1 c. sugar
- 2/3 c. canned pumpkin
- 3/4 c. biscuit mix
- 2 tsp. ground cinnamon
- 1 tsp. pumpkin pie spice
- 1 c. chopped pecans
- 2 Tbsp. powdered sugar
- 8 oz. cream cheese
- 1/3 c. butter
- 1 c. sifted powdered sugar
- 1 tsp. vanilla
- Grease bottom and sides of 15 x 10 x 1-inch jellyroll pan; line with wax paper and grease wax paper.
- Set aside.
- Beat eggs at high speed with mixer until thickened.
- Gradually add sugar, beating until soft peak forms and sugar dissolves (2 to 4 minutes).
- Fold in pumpkin.
- Combine biscuit mix and spices; fold into pumpkin mixture and spread evenly into prepared pan. Sprinkle with chopped pecans.
- Bake at 375u0b0 for 13 to 15 minutes.
