Apple Smoked Cheddar Tea Sandwiches
- 3 Tbsp. light mayonnaise or light cream cheese
- 1 tsp. curry powder
- 1 1/2 tsp. chutney, chopped fine
- 4 thin slices firm white bread
- 4 oz. Applewood smoked white Cheddar, thinly sliced
- 1/2 medium Granny Smith apple, thinly sliced
- 1/3 c. watercress leaves
- softened butter or margarine or cream cheese
- Combine mayonnaise or cream cheese, curry powder and chutney. Mix well and divide between bread slices.
- Spread butter on the outside surface of bread.
- Heat nonstick skillet.
- Put half of cheese on two bread slices; divide and layer with apple slices overlapping top with watercress leaves, then layer with remaining cheese.
- Top with remaining slices of bread and press together. Place in warmed skillet.
- Put butter on top side while in skillet. Cook about 4 minutes per side to brown, turning carefully.
- Cut in quarters to serve.
