Pasta Salad(With Lemon, Thyme And Prosciutto)
- 1 Tbsp. salt
- 1 lb. capellini (thin pasta noodle)
- 1/4 c. olive oil
- 2 tsp. grated lemon peel
- 1 1/2 Tbsp. lemon juice
- 3 Tbsp. fresh thyme, chopped
- 2 Tbsp. parsley, chopped
- 1 tsp. garlic, finely chopped
- 8 oz. thin sliced Prosciutto, cut into thin strips
- 2 tsp. salt
- 1/2 tsp. freshly ground pepper
- Dash hot sauce
- Sprigs of fresh thyme for garnish
- Cook pasta in 4 qt. water with 1 Tbsp. salt, until al dente. Drain and rinse under cool water.
- Drain again.
- Transfer pasta to a shallow serving platter.
- Toss with olive oil.
- Add lemon peel, lemon juice, thyme, parsley, garlic, Prosciutto, remaining salt, pepper hot sauce and mix thoroughly.
- Taste and adjust seasoning if needed.
- To serve; garnish with sprigs of thyme. Makes 6 - 8 servings.
