3 Cheese Chicken Bake
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 (8 oz.) can sliced mushrooms
- 2 c. shredded Cheddar
- 1/2 c. grated Parmesan
- 3 c. diced cooked chicken
- 3 Tbsp. butter or oleo
- 2 c. Ricotta or cottage cheese
- 1 (2 oz.) jar pimentos
- 8 oz. noodles, cooked
- 1/2 tsp. dried basil
- 1/4 c. butter bread crumbs
- In skillet, saute onion and pepper in butter until tender. Stir in undiluted soup and drained mushrooms and pimentos.
- Add basil. In an 8 x 8 x 2-inch pan, mix together noodles, chicken, Ricotta and Cheddar.
- Pour sauce mix over and top with bread crumbs and Parmesan cheese.
- Bake at 350u0b0 for 35 to 40 minutes.
