Tinkie'S Banana Bread

  1. Preheat oven to 350 degrees
  2. Grease 5x9 loaf pan & line with parchment or waxed paper.
  3. Sift dry ingredients into large bowl.
  4. Combine eggs, oil & bananas in blender. Blend until very smooth. Alternatively, mash bananas well by hand & combine with beaten eggs & oil.
  5. Fold wet ingredients into dry ingredients; batter will be a little lumpy. Resist the urge to stir too much!
  6. Pour batter into prepared loaf pan. Bake for 1 hour or until toothpick inserted into middle of loaf comes out clean.
  7. Remove bread from pan & let cool at least 10 minutes before slicing.
