Zucchini + Chocolate Loaf

  1. Preheat your oven to 180 degrees C and prepare 2 loaf tins with baking paper.
  2. Grate your zucchini and set aside.
  3. In a large bowl, beat the eggs, oil, yoghurt and caster sugar. Add the vanilla extract and grated zucchini and stir until combined.
  4. Sift in the two flours and cinnamon and fold in gently. Stir though the sultanas.
  5. Divide the mixture into the two prepared loaf pans.
  6. Bake for an hour, or until a skewer comes out clean. Leave to rest for a few minutes before removing from the tins and cooling them on a wire rack.
