Mushroom Pilaf With Cauliflower Rice
- Cauliflower rice
- 1 medium cauliflower (about 2 pounds)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon sea salt
- 15-20 saffron threads
- 3-4 tablespoons sunflower oil
- Mushrooms
- 3 tablespoons sunflower oil
- 4 cloves of garlic, minced or grated
- 1 pound mushrooms, sliced (I had mix button and oyster mushroom)
- 1-2 small sprigs fresh thyme
- 2 tablespoons chives, finely chopped
- 1/3 cup freshly chopped parsley
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- Cut cauliflower into florets.
- Mix garlic powder, onion powder, salt and saffron threads which you rubbed between the palm of your hands in a separate small bowl.
- First place oil over cauliflower and mix then sprinkle with seasoning.
- Roast at 400 F degrees for 35-40 minutes. Let slightly cool. rnIn batches process in food processor till you archive consistency of the rice or any way you like.
- Place oil, garlic, mushrooms and thyme in the pan and sate for 3-4 minutes.
- Add chives, parsley, salt and freshly ground pepper. Keep sauteing until most of the juice evaporates.
- Mix cauliflower and mushrooms and serve.
