Mushroom Pilaf With Cauliflower Rice

  1. Cut cauliflower into florets.
  2. Mix garlic powder, onion powder, salt and saffron threads which you rubbed between the palm of your hands in a separate small bowl.
  3. First place oil over cauliflower and mix then sprinkle with seasoning.
  4. Roast at 400 F degrees for 35-40 minutes. Let slightly cool. rnIn batches process in food processor till you archive consistency of the rice or any way you like.
  5. Place oil, garlic, mushrooms and thyme in the pan and sate for 3-4 minutes.
  6. Add chives, parsley, salt and freshly ground pepper. Keep sauteing until most of the juice evaporates.
  7. Mix cauliflower and mushrooms and serve.
