New England Clam Chowder

  1. Heat butter in large saucepan over medium heat.
  2. Add onion; cook 8 minutes or until tender.
  3. Stir in flour until blended; cook, stirring, 1 minute.
  4. Add water, potatoes and pepper.
  5. Bring to boiling.
  6. Lower heat; simmer 10 minutes or until potatoes are to your desired doneness.
  7. Add clam meat; cook 3 minutes.
  8. Add cream (milk); cook just until heated through.
  9. Ladle into bowls and garnish with parsley.
  10. Serve with oyster crackers.
  11. Makes 8 servings.
