Sweet Potato Soup With Attitude

  1. Saute the onion and garlic in a small amount of olive oil until soft. Add the sweet potatoes and carrots and stir to combine. Mix in the curry paste and cook for 1 minute, until fragrant.
  2. Add the vegetable broth. Bring to a boil, lower the heat, and simmer, covered, until the sweet potatoes and carrots are softened, about 20 minutes.
  3. Using an immersion blender or carefully using a blender, blend until smooth. Season with salt and pepper and serve hot.
  4. Garnish with chopped cilantro or a drizzle of cream, if you wish. Some crunchy croutons or oyster crackers would also be excellent.
